What you need:
- Red curry or Hot curry paste (4 tbsp)
- Thai egg plant (optional)
- Vegetable oil (2tbsp)
- Chilli
- Cat fish
-Coconut milk
- Fish sauce
- Bamboo shoot
- Pepper seed
- Basil leaves
- Lime leaves
On medium heat, mix the curry paste with vegetable oil.
On the side, cut egg plants and prepare fish, chillies as below.
Back to the pot, put 1 cup of coconut milk and mix well.
Boil fish in the water for 10 seconds to get rid of fishy smell.
Put bamboo shoot (from a can), egg plants, fish into the mix of curry sauce.
Add 2 more cups of coconut milk and put on high heat. Don't stir too much or fish will fall apart.
One fish is cooked, put in Basil leaves.
and pepper seed. I also put in ginger but it's really not necessary. This is the step where you mix a bit of sugar and fish sauce to the taste you like.
Slice lime leave and put in the end.
